Campus Developments

Construction and projects happening this summer

When students head home for the summer, Plant Services comes out to play! Not really play, per se, but the team will take advantage of a relatively empty campus to make some much-needed changes and updates. Below is a list of developments to be aware of over the next few months.

Major Projects

  • Renovation of the Cardinal Bea House for the School of Leadership Studies
  • Converting former living quarters into offices
  • Removing individual bathrooms from living quarters
  • Transformation of Foley Library
  • Integrus Architecture working on project to modernize the learning environment

Smaller Updates

  • Installation of 48 electric vehicle Level 2 charging ports
  • Renovation of space in the Herak Center for the Institute of Informatics and Applied Technology
  • Expanded suite space within the UW-GU Health Partnership building for the Department of Public Health
  • Replacement of path pavers on the northside of College Hall
  • Roofing work on Kennedy Apartments and Foley Library

Dessert of the Month: Almond Croissant Cookies

This buttery, rich dough mimics the indulgent taste of frangipane and is perfect for beginners and seasoned bakers alike! Please note some of these measurements will seem weird because I’ve adapted the recipe from grams to cups for an easier baking experience.

INGREDIENTS

1 cup butter, melted
¾ cups light brown sugar
¾ cups + 1 tbsp sugar
1 ¾ cups + 2 tbsp flour
1 tsp baking powder
¼ tsp salt
¾ cups ground almonds
1 egg + 1 egg yolk
1 tbsp pure vanilla extract
Powdered sugar to sprinkle on top
Optional: flaked almonds

INSTRUCTIONS

Step 1 Melt butter in a saucepan over medium heat, or in a microwave, and allow to cool slightly.

Step 2
In a mixing bowl, combine light brown sugar, granulated sugar and melted butter. Mix well until combined.

Step 3
Next, add the egg, egg yolk and vanilla and mix to combine.

Step 4
Gradually add the flour, baking powder and ground almonds, mixing until a dough forms.

Step 5
Portion into balls and roll in the almond flakes, if using.

Step 6
Freeze the dough balls for about 30 minutes. In the meantime, preheat your oven to 350 degrees.

Step 7
Bake in a preheated oven for 12-15 minutes or until the edges are lightly golden. Remove from the oven and allow to cool for a few minutes before transferring them to a wire rack to cool completely. Once the cookies are completely cool, dust them with powdered sugar.
